Fluffernutter Macarons

It’s always so great when my friend Jade comes to visit. We spend the whole time laughing at stupid things, reminiscing and eating far too much. This trip she visited with her lovely boyfriend Brad and we managed to lure them out of London this weekend for a family BBQ. On her last visit I made all of these but this time I went for something a little smaller scale but super tasty. We used to live on peanut butter and jelly sandwiches at school and when we discovered that putting Marshmallow Fluff with it was a thing we thought it was amazing. I don’t know if Jade and I were just easily amused back in school, but we found the name Fluffernutter ridiculously funny and there was an equally hilarious song that went with it. To make the macarons I used this recipe and added a little ‘Chestnut’ food colouring to make them a little peanut coloured. I filled them by piping a circle of peanut butter frosting and blobbing a bit of this jelly in the middle. I then piped a bit of Marshmallow Fluff on top and sandwiched the two halves together. I’d like to think that turning our school snack into macarons somehow sophisticates the concept but as soon as I saw them oozing I knew otherwise. They tasted so good and gooey and most importantly Jade loved them. Come back soon Jadeo, I miss you already! x  

Peanut Butter Buttercream

250g icing sugar

80g unsalted butter

25ml milk

2 big spoonfuls of Peanut Butter (I used Jif)

Beat the icing sugar, butter and peanut butter and milk together until smooth. Add more peanut butter to taste if necessary.
