Ibiza Cake

Don’t get mad, but you’re probably reading this while I’m on a boat in Ibiza. Yep. My sister decided to celebrate her birthday in Ibiza this year, in time to catch the closing parties and visit our friend Katy who has been working out there the whole summer. I cant wait to party and have fun with our friends, to dance to David Guetta and of course Instagram sunsets. We had a family celebration this past weekend and felt it was only appropriate to makean Ibiza themed cake for Lauren. I decided to be ambitious and go for two tiers. Why not. There were seven, yes seven, layers of cake in total. My sister deserves ALL the cake. The design for the cake was inspired by this image but I wanted to also depict the sunset and include little pieces to represent all the different parts of our trip that we have planned. The bottom ‘beach’ tier was passion fruit flavour as it’s Lauren’s favourite. For this I used the new Tiptree Passion fruit curd along with some passionfruit buttercream. I also made a passionfruit syrup that I brushed all the cake layers with. It tasted amazing and using some fresh passion fruit really lifted the buttercream. The top tier was vanilla with raspberry jam. For the sand I blitzed some digestive biscuits and sprinkled them over thinly spread royal icing so they sort of stuck. To create the waves on the top I mixed half flower paste and half fondant into different shades of blue then cut them in to strips of wave shapes and overlapped them around the cake, starting with the darkest then moving to the lightest to get an ombre effect. Lauren loved her cake and I think it made her even more excited for her birthday weekend. Happy Birthday Lauren! xxx
