Oh. My. Gosh. I’m Excited. Tomorrow morning I’m heading to LA for a two week holiday. We are going to Coachella which I’ve been talking about/wanting to go to for aaages and this year we finally decided to go. We’ve planned lots of other fun things to do and explore too. So, while I won’t be posting about any Easter baking or filling your screens with cakey goods covered in mini eggs (you could however check out previous years posts or stare at these mini daffodil cupcakes I whipped up on Mother’s Day), I will be searching out some tasty treats across the pond and I can’t wait to tell you ALL about it. I’m not Irish. I am however a fan of the colour green and an even bigger fan of alcoholic cupcakes. I spotted these beer flavoured gummy sweets about a month ago and have been saving them to top these cupcakes. I found them locally but you can buy them here. The cake itself is a chocolate Guinness and I used this recipe, minus half the amount of salt. The buttercream is chocolate Bailey’s flavour, yep it’s as good as it sounds. They brought out the chocolate version a few months ago and it’s delicious. The whole thing together makes for a pretty boozy cupcake but I would totally serve them with a shot of Guinness to really celebrate! Happy St. Patrick’s Day! 

This week was my best friend Becki’s birthday. The plan was to have nibbles and drinks at hers before going out so I thought I would make her some birthday cupcakes to share with everyone. They were inspired by the wrapping paper for her present. I knew it would be perfect as she loves sweets and we always get pick ‘n’ mix at the cinema. The cupcakes were vanilla filled with raspberry jam and topped with a few of her fave sweets including white chocolate jazzies. I love how fun they look and that you could easily customise with any sweets that take your fancy. Happy Birthday Becki! x

I wanted to share a few speedy snaps I took of these cupcakes because I think they will make you happy. They totally sum up how I’m feeling about these welcome bursts of spring weather and hopefully they brought some sunshine to two ladies celebrating their birthdays this week. Flowers are always cute for girly birthday cupcakes and I made these ones by using two different size flower cutters and layering them on top of each other with a sugar pearl in the centre. I made yellow ones for the lemon cupcakes and pink for the vanilla. Wishing you a Happy Birthday Sharon and Traci! x

Today is all about love…and chocolate. The last of my treats for Valentine’s are these chocolate cupcakes. Half are topped with raspberry buttercream and the other half a salted caramel buttercream with some caramel in the middle. Wishing everyone a very sweet Valentine’s Day! xx
