London Marathon Medal Cupcakes

Aside from the occasional Race For Life and a frantic dash for the train I never run. Therefore, anyone that runs any marathon is a superhero to me. It’s an incredible achievement that supports so many charities and I wish I could give everyone that ran a cupcake. However, this batch is reserved for my amazing friend that ran it this year. She did so well and I can only imagine all the kinds of strength it takes to get round the 26 miles. I apparently think all running should end in cupcakes (evident here), so to celebrate her achievement I made these vanilla cupcakes filled with raspberry jam. I recreated the marathon medals by making circles out of  ‘chestnut‘ coloured fondant which I dusted with gold. I placed them over those delicious fizzy strawberry belts you get at the cinema, which I cut up and curved over the frosting. Congratulations buddy and to everyone that took part this year!
